Chill Hours and Choosing Fruit Varieties That Will Actually Fruit Where You Live
It's easy to treat "apple" or "peach" as a single decision — pick the fruit, pick a variety you like the sound of, plant it. But within almost every fruit species, different varieties have been bred with wildly different winter-chill requirements, and that one hidden number decides whether a tree thrives, limps along with a disappointing crop, or never fruits at all in your particular climate. Getting an estimate of your own site's chill hours is only half the job; using it to actually choose between varieties is the part that pays off, and it's a decision worth making before you plant rather than after a few disappointing springs.
Why "buy local" only partly solves this
A genuinely local, independent nursery usually stocks varieties that suit the regional climate, which does most of the filtering for you. The risk creeps back in with big-box garden centers supplied from a central distribution warehouse that may serve a wide range of climates from one buying decision, and with mail-order and online nurseries that ship the same catalog nationwide or further. Neither is wrong to buy from, but neither guarantees a chill-appropriate match for your specific yard the way a knowledgeable local grower's shelf usually does — which is exactly why checking the stated chill requirement yourself, regardless of where you're buying from, is worth doing every time rather than assuming the retailer has already filtered for your climate.
Start with an honest estimate of your own site
Before comparing any variety's stated requirement, you need a number to compare it against. Our Chill Hours Calculator builds that estimate from a typical dormant-season day's low and high temperature, using the classic 32–45°F counting model, projected across however many days your winter typically stays in that dormant range. A borderline-mild day — a low of 30°F and a high of 48°F — comes out to roughly 12.4 chill hours, which across a 100-day dormant season projects to around 1,238 hours for the whole winter. A day that spends its entire 24 hours inside the 32–45°F band (a low of 35°F and a high of 40°F, for instance) credits the full 24 hours, since nothing in that swing ever leaves the counted range. The point of running your own numbers first, before shopping for trees, is that "roughly 1,200 hours" and "over 2,000 hours" call for genuinely different variety shopping lists, and no amount of enthusiasm about a particular apple fixes a climate mismatch.
Two more climates, side by side
Seeing a couple more worked examples makes the comparison concrete. A cold-winter site with a typical low of 25°F and high of 42°F, over a long 150-day dormant season, projects to roughly 2,000 estimated chill hours — comfortably in high-chill territory, and a poor match for anything bred for a mild climate, which would likely leaf out and bloom far too early relative to that region's actual last-frost timing. A shorter, milder season — a low of 38°F and high of 50°F over just 80 days — projects to roughly 1,060 hours, squarely in moderate territory: enough for plenty of standard temperate varieties, but a real ceiling on how high-chill a selection you can reasonably plant.
Rough chill categories, without pinning a number to a name
Catalogs and nursery tags typically bucket varieties into rough bands rather than a single precise figure, and it's worth knowing the shape of those bands even before you start reading specific tags. Low-chill selections (bred for mild-winter regions) often sit in the low hundreds of hours. Moderate-chill selections, suited to a typical temperate climate, commonly land somewhere in the mid-hundreds. High-chill selections, bred for cold continental winters, can require several times that. We're deliberately not attaching a specific chill-hour number to any named variety here — breeding programs update their own varieties' figures, and the same variety name can sometimes be applied slightly differently by different growers or regions. Always check the specific number on the tag or catalog listing for the actual variety in front of you, and treat any number you read elsewhere (including the rough bands above) as context for what to expect, not a substitute for checking your specific plant.
Reading a nursery tag against your own estimate
Once you have both numbers — your site's estimated seasonal chill, and a variety's stated requirement — the comparison is straightforward, though the margin you leave yourself matters:
- Comfortably over the requirement (your estimate clears the variety's stated number by a wide margin): safe territory, and a reasonable buffer against an unusually mild winter some years.
- Right at or just over the requirement: workable in an average year, but a genuinely mild winter could occasionally fall short, since natural year-to-year variation means your "typical" day isn't every day.
- Under the requirement: expect the classic under-chill symptoms — delayed and uneven leaf-out, scattered bloom, and a thin, unreliable crop — even on an otherwise perfectly healthy tree. This isn't a case where good soil, fertilizer, or pruning compensates; the mismatch is climatic, not horticultural.
If you're choosing between several candidate varieties of the same fruit and your site sits in a genuinely borderline zone, favor the lower-chill option of the group rather than the higher one — a lower-chill variety planted in a colder-than-needed climate generally still performs fine, while a higher-chill variety planted where it's genuinely under-chilled usually doesn't.
The same principle across an entire yard
Chill requirement doesn't have to be an all-or-nothing constraint on what you grow. A common, practical approach for a marginal or borderline climate is to mix varieties deliberately: plant your highest-confidence, best-matched varieties as the backbone of the planting, and treat one or two higher-chill "reach" varieties you're less certain about as an experiment rather than betting the whole yard on them. That way a single mismatched variety is a minor disappointment in an otherwise productive planting, not the difference between a good year and a wasted one.
What a warming trend means for an existing planting
Winter chill accumulation isn't a fixed, unchanging number for a given location forever — it reflects actual weather, and actual weather varies year to year and can trend over longer periods too. This matters less for choosing a new variety today (use the best current estimate you have) than it does for interpreting a change in an established tree's performance: a mature tree that fruited reliably for years and has more recently started blooming later, more unevenly, or more sparsely is worth reassessing against a fresh chill estimate for your site's current typical winter, rather than assuming something else has gone wrong with an otherwise unchanged tree.
Chill requirement and frost date are two separate checks
It's easy to conflate chill-hour requirement with frost timing, since both are about winter cold, but they answer different questions and both need checking separately. Chill requirement asks whether a variety accumulates enough cold to break dormancy properly at all; your area's typical last-frost date asks whether that variety's bloom time, once it does break dormancy, lands after the frost risk has passed. A well-chilled tree that blooms too early relative to your last-frost date can still lose a season's flowers to a late freeze even though the chill requirement itself was satisfied — two separate failure modes that happen to both trace back to winter climate, and both worth checking before you commit to a variety.
Rootstock and spacing decisions come after the variety, not before
Once you've narrowed a fruit down to a chill-appropriate shortlist of varieties, rootstock and spacing are the next decisions — but they're independent of the chill question, not a way to work around it. - Estimate your own site's seasonal chill hours first, ideally from an actual low/high reading at the planting site rather than a regional average.
- Check the stated chill-hour requirement on the tag or catalog listing for each specific variety you're considering — not a general rule of thumb for that fruit species.
- Favor the lower-chill option when you're genuinely unsure between two otherwise similar varieties in a borderline climate.
- Treat a high-chill "reach" variety as an experiment planted alongside well-matched backbone varieties, not as the sole planting.
- Reassess an established tree's chill match if its bloom or fruit set noticeably worsens over several years, rather than assuming a health problem first.
When the mismatch is already planted
There isn't a reliable way to artificially add chill hours to a tree that isn't naturally getting enough — no product or technique substitutes for actual accumulated cold.
